weekend brunch // sweet potato oatmeal casserole

Breakfast (especially Brunch) has always been my favorite meal of the day… it’s the only meal where the main course can be something sweet!  I had some sweet potatoes lying around that I was going to use to bake some fries, but hadn’t gotten around to it yet… so I decided to make a sweet potato casserole for this weekend’s brunch.  So good and good for you :)

You can mash the sweet potato and banana directly in the pot to save a dish :)

homemade apple butter

I made this apple butter specifically for the Baked Apple Butter Donuts, but I soon realized the many uses of this naturally sweet spread.  You can use it to add a little spicy sweet on just about anything: on toast, oatmeal, pancakes, cottage cheese.  You can bake with it to make different sweets, like Apple Butter Ice Cream or Apple Butter Bars — it can also be a savory spread used in recipes like this sandwich.  Either way, you can’t really go wrong, plus it tastes delicious on its own!

A quick stop at the Brentwood Farmers’ Market this morning with Riley. It was nice to finally get out of the house for a change and to get dressed up — though we only lasted about 45 minutes at the Market until Riley started getting fussy and crying… Oy, the life of a newborn :)   Can’t wait for more adventures with her <3

baked apple butter donuts made with spelt flour

Donuts are one of my weaknesses (among other sweets :))  So, in celebration of National Donut day, I thought I make a healthier version of this guilty pleasure.  These are made with spelt flour — a sweet, nutty, mild-flavored whole grain flour that’s a good source of protein and fiber.  They turned out a little more cake-like, but absolutely delicious nonetheless.

The apple butter in these donuts is the real star.  I’ll post the easy recipe very soon!

I unintentionally slightly overfilled the donut pan — these rose so well in the oven that you only need to fill the pan about 3/4 of the way to avoid the crust top.

blueberry buckwheat pancakes

No one ever told me that taking care of a newborn could literally take up your whole entire day!  But, I think I’m starting to finally get back into the swing of things.  My sweet baby Riley slept long enough this morning so I can make a proper (healthy) breakfast.  While it was awesome being able to eat pretty much anything I could during pregnancy — it’s definitely time to start making healthier choices and hopefully lose some of this baby fat while I’m at it :)

These blueberry buckwheat pancakes really hit the spot and because buckwheat is a really good source of protein and fiber, it helps to keep you fuller, longer!  It’s sweetened with honey and blueberries… so no added sugar is a plus!
